Yes, it's been a long time since the last newsletter. Almost two months. After five wonderful, glorious, healing months on Maui I'm back on the farm in Georgia. Yes, I went to Maui to open another Creative Health Institute, but no, that hasn't happened. Not yet.

West Maui

The people, the scenery, the weather, the outdoors lifestyle of Maui are all outstanding, and I loved every day of my five months on the island. But the most impressive parts of living on Maui were the abundance of locally grown fresh Organic produce and the wide-spread awareness of the benefits of eating a plant-based diet.

Every town has an Organic food store. Indeed, in those towns that there was only one market, it would be an Organic one. No matter where I traveled on the island I could stop into a local market and eat 100% Organic Raw Living Foods, much of it locally grown. It was a three block stroll from my house to Mana Foods in Paia, thus I kept very little food in the house. Instead, three times a day, seven days a week, I'd stroll down to the market and make up a nice fresh tray. It was SO easy - and enjoyable - to live 100% Raw.

Here in Georgia I often have to define what vegan is. On Maui, when folks heard I'm a Raw Vegan they would reply that they "had heard a lot of good about that lifestyle," and wanted to know more. Quite a change from the mainland.

Almost every Wednesday there was a vegan potluck, with as many as 100 people attending. I usually took Victoria Boutenko's "Generic Recipe for Chowder" from her book Raw Family (pg. 73) and numerous people would copy down the recipe that I'd taped to the gallon jug I brought it in.

Most of my neighbors in Paia were vegetarians, and would constantly ask me to bring one of my "Special Raw Dishes" over for lunch or supper. Even my carnivorous neighbors made sure to have lots of veggies available for their near-weekly yard parties, and would ask me for suggestions before shopping. Everyone respected the lifestyle choices of their neighbors non-judgementally.

The energy of living in a community of vegans and vegetarians was very special. Peaceful, calm, loving and considerate are good descriptive adjectives for the residents of Paia. I love it there.

Our intention of opening an Institute was very well received by the native Hawaiian community. They, like most of the world, have rapidly increasing obesity and disease in their citizenry. Before WW2 their diet was mostly plant-based. After the war their traditional high-fat diet switched from coconut to processed canned meats.

"Spam and Rice" wrapped in seaweed is sold in convenience stores, and fast food restaurants have "Spam and Eggs" on the menu. It's a popular staple for native Hawaiians.

 

So, being thus inspired by the great food choices, the environment, the people, and the community interest in lifestyle education, I joined Carol Hulet with the goal of opening a Creative Health Institute on Maui, enthusiastically supported by Don Haughey, the founder of CHI. CHI's Dr. Ann Wigmore diet and lifestyle has been such a blessing and boon for us that sharing it with others just seems natural.

We had planned to rent a hall, perhaps the Maui Arts and Cultural Center, and start out by teaching a ten-day program about the benefits of the Raw Living Foods® lifestyle and how to prepare yummy raw meals. But we realized that these classes would only be of limited benefit if we couldn't give the students hands-on experience. Finding an appropriate place to set up all of the equipment was a challenge, as well as having to assemble and disassemble the setting every month.

Teaching the hands-on experience efficiently meant renting a more permanent location. Renting a more permanent location meant teaching classes twice a month in order to lower the cost. Teaching classes more often meant a permanent staff, instead of relying exclusively on volunteers. Having a more permanent staff meant paying living wages. Living expenses in Maui are quite high, which meant that payroll was going to be high.

Before we knew it, the cost of our ten-day program had tripled in cost, then doubled again. Furthermore, we had originally envisioned that students would stay at local hotels, much like they do at the Living Food Institute in Atlanta. The cost of doing that on Maui is easily thrice the cost of Atlanta hotels. Add to that the cost of a round-trip ticket from the mainland, and the cost of a ten-day program on Maui was becoming prohibitively high for most people. Even for locals it would cost much more than we had intended on charging.

The economical solution is obvious. In order to establish the Creative Health Institute on Maui we need to acquire a residential facility that will accommodate guests and full-time staff. Oh, we found properties on Maui - especially on the windward coast of West Maui - that would be appropriate, but my, oh my, what a high mortgage payment we would have.

During my 10 years on the Board of Directors of the United Way of the Florida Keys 9 of the as Chairman of the Allocations Committee, and my 4 years as Director and Business Manager of Creative Health Institute in Michigan I learned how important it is that a successful non-profit not be burdened with a large fixed overhead. Indeed, if it wasn't for the fact that Don Haughey charged CHI a rent of $1 a year most years, CHI wouldn't have survived since '76.

 

Few stories have one simple plot line, and this one is no different. When I left for Maui last December I gave the responsibility for day-to-day operations of the Home Study Program (www.chiDiet.com) into the hands of someone I trusted, someone I'd known for may years and spent four months training before my departure. While he had dealt with filling orders, etc., acceptably during my two-week trip to Maui in October, during my extended absence from the first of December to mid-January things got constantly worse, with orders going out late and not being filled correctly. I'm not upset with this old friend, it's just something that was a bit beyond his abilities. How can you be mad at someone you've known for 30 years?

Thus, in mid-January I returned to Georgia for two weeks. We packed up the expensive bits of equipment and shipped the mail order operation to Maui. I turned my rental house on Maui into a warehouse and started filling orders from there.

Doing business from Maui, however, has its own problems. Many of our regular vendors don't ship to Alaska or Hawaii. For those that do, our shipping costs were much higher. Supplies that we bought on Maui also cost much more than they did on the mainland. Shipping delays were an issue, too. Priority Mail takes 2-3 days longer from Maui; surface Parcel Post takes an average of 30 days. Our warehouse in Georgia is on my farm, which means free rent; on Maui the monthly rental on the house was $1,200. On the farm we pay $75 a month for electric - on Maui we paid three times that much, plus we had to pay for water, sewer, electric and garbage collection. Our toll-free number expenses went from $10 a month to over a hundred.

Up until this time our "profits" from the Home Study program went to support Raw Living Foods training programs in Africa and other places. Now there not only weren't any funds for mission projects, but I was once again subsidizing Home Study from my small pension annuity.

Yet all of us involved with the Creative Health Institute on Maui project firmly believed in the value of opening an Institute in such a beautiful, powerfully healing place.

 

So the decision was made that I would return to Georgia, re-establish the mail order operation on the farm, and that I would go back to fund raising, both for the Raw Missions and for CHI on Maui. Carol Hulet remained on Maui, where she's lived for the past seven years, and she and her father are working on grant proposals, primarily with Maui agricultural interests.

At this point we're back up and running on the farm in Georgia. My current challenge is to find a Personal Assistant - a business partner, if you will, that is willing to relocate to Georgia and help me in expanding the exposure of the Raw Living Foods® Lifestyle.

Back in the days that I was running my computer companies I'd simply run advertisements in the trade publications, offer a generous salary and relocation package, read a pile of resumes, interview a handful of people, and have the "perfect person" within a couple of months.

This personal assistant position is different, however. Not only do they need to be a graduate of one of Dr. Ann Wigmore's Raw Living Foods Lifestyle programs, but they need to be dedicated - indeed, impassioned - with sharing this knowledge with others. Instead of supervising a staff, they need to be comfortable with computers, email, the Internet, and highly automated forms of sales and distribution. Indeed, I'm well able to run the Home Study Program alone, but doing so is one reason there hasn't been a newsletter in almost two months.

So I'm back on the farm. It's really, really great to be back here, back in my spiritual retreat, away from all the people and the hustle and bustle of Maui. You may laugh when I call Maui a busy place, but compared to the farm here in rural Georgia it IS a bustling place. If you have Google Earth, you'll find the cabin at 32° 47' 19.27" N 82° 7' 35.44" W. The farmhouse and new barn are to the northwest, and the fields are to the east; most of the lower half of the triangle formed by the 3 roads is where I live. Yes, lots and lots of trees.

The Home Study Program about Raw Living Foods was developed from the teachings of Dr. Ann Wigmore at Creative Health Institute. arrow  Uncooking with RawRose - Book Review

I picked up an interesting new raw book while I was on Maui. It's titled, "Uncooking with RawRose - Your Guide to Raw Foods," by Rose Vasile (154 pages with color photos). Rose was the Program Director at Creative Health during the time I was business manager and Executive Trustee at CHI, and I remember her well.

Actually, this is much more than just a uncookbook. It's a compact guide to the Living Foods lifestyle, as we teach at chiDiet.com and Creative Health Institute. I found it clear, concise, and to the point. I especially enjoyed the quotation on page 23 in paragraph 4, and the info on page 154 in paragraph 5 (you'll have to find a copy to find out what it is!) <grin>. I had nothing to do with that; I didn't know RawRose would be mentioning me until I bought a copy of the book. It's the first time I've been mentioned under "recommended reading," and I'm blushing.

I've been finding it a good uncookbook because it's printed on glossy paper, spiral bound so that it lies flat, and has a number of beautiful color photos that show how tempting raw living food dishes can be. Many of my favorite dishes from CHI are included.

Red Pepper Boats

Recipes don't need to be complicated to be tasty. Fill these Red Pepper Boats with cargo and ship them to your mouth.

Extra Prep Time: None
Quantity: lunch for one person

Ingredients:
- 1 red pepper (cut in large wedges)
- 1 avocado (cut in 1/2" chunks)
1 garlic clove (bits of garlic sliced extra thin, or garlic from a garlic press)
- 1 table spoon fresh cilantro or parsley (chopped fine)
- juice of 1 lime
- a few dashes of sea salt

=> Put avocado chunks in the red pepper wedges. Add garlic, cilantro or parsley, lime juice and sprinkle with salt.

ALTERNATIVE:
Another tasty use of red pepper wedges is to stuff them with raw sauerkraut. A small amount of caraway seeds mixed with the sauerkraut adds a nice flavor.
