Farmer2 Problem:

The value of U.S. organic imports now exceeds exports by a ratio of approximately 8 to 1.
In California, which grows 40% of US organics, the number of acres transitioning into organic are now nearly balanced by the acres transitioning out. Evidently, many farmers aren't making enough money growing organically to remain certified, despite the booming retail market.

In the U.S., organic food accounts for about 2.5 percent of all food sales. But out in the field, just 0.2 percent of farmland is under organic production.

arrow  Locally Grown Organics Gaining Popularity

612vegetables If you'd like to know exactly where your fresh produce came from, you now have that option.

Irv Cernauskas is co-operator of Irv and Shelly's Fresh Picks, an online sales site where the public can order local and organic produce, meat, dairy and eggs and have it delivered year-round to their homes (www.freshpicks.com). Fresh Picks contracts with farmers in Illinois, Indiana and Michigan to provide the organic foods.

Cernauskas spoke at “Homegrown, Northwest Indiana: A Local Foods Expo" March 13 at the Porter County Expo Center in Valparaiso.

His interest in the environment and fresh food began at the age of 5. He lived in Windsor, Ontario, and when the family went north on vacation he remembers smelling fresh air and eating blueberries off the bush for the first time.

Cernauskas has been involved in nonprofit environmental organizations and is a board member of The Land Connection and Seven Generations Ahead, which creates market opportunities for organic farmers.

"There's a demand for good food," Cermauskas said, adding that the benefits of organic, fresher food include:

• Better health. "The last place to cut the budget is for good quality food," Cernauskas said, citing the possibility of toxic chemicals, mad cow disease and E. coli as dangers to health.

• Protection of the environment, such as watersheds, wildlife habitat and reducing global warming.

• Support of the local economy. "We import more food than we export," Cernauskas said.

• Humane treatment of animals. "If we know the animals we eat have had a decent life, on free range, we feel less guilt."

Cernauskas said before he and his wife began their business, he held focus groups to see if the idea of delivering locally grown food to people's homes was feasible.

"These groups told us that if ethical food was available, 30 percent would choose it if it were available," he said.

Irv and Shelly's Fresh Picks now has 1,100 customers to whom they deliver in 55 ZIP code areas around northern Illinois.

"They're thrilled to get fresh food," Cernauskas said. "Not all of them can get to farmers’ markets."

Scott Hutcheson, who conducts economic and community development work for Purdue University and moonlights as "The Hungry Hoosier," a food writer, also spoke at the expo.

"I get to drive around Indiana and eat," Hutcheson said. "Local food is the new organic."

Hutcheson spoke about the "Slow Food Movement," which grew out of abhorrence of today's fast food culture.

"You can now find place-based foods on menus," he said, like Nick's English Hut in Bloomington, which lists Fischer Farms Natural Black Angus Beef Burger.

Since 1994, farmers’ markets have grown from 1,755 to more than 4,300 in 2006. Yet, Wal-Mart plans to open 265 super centers this year.

Farmer7 "How do the systems co-exist?" Hutcheson asked. "Wal-Mart does sell organic foods. I can see people going to Wal-Mart for staples, then to the farmers’ market for other items."

A survey conducted in Indiana revealed "local" means within state for 39 percent of respondents; 46 percent were willing to pay 1 to 5 percent more for fresh goods. Hutcheson mentioned that Collins Caviar in Michigan City is a "rock star" of producers, along with Capriole Goat Cheese in Greenville and Traders Point Creamery in Zionsville.

"So what is the state of the plate in Indiana?" Hutcheson asked. "Well, we have appetizers and side dishes, but not a well-planned meal yet; we need new networks and initiatives for local foods. We need more local food expos like this. We should challenge ourselves to spend 10 percent of our food budget on locally produced food."

arrow  USDA Loses Lawsuit Over "Above and Beyond" Testing

We're running this article because it has implications for Organic Produce and other food items:

Blind Creekstone Farms has won one of the most bizarre court cases the USDA has brought upon itself in recent years.

Early last year, after the discovery of another case of Mad Cow Disease in the U.S., foreign markets tightened their ban on U.S. beef based on the fact that the USDA requires such a small percentage of meat to be tested for this fatal disease. In an attempt to maintain sales with customers overseas, Kansas-based Creekstone Farms announced it would voluntarily test all of its meat for Mad Cow Disease.

Surprisingly, the USDA responded to Creekstone, saying it was illegal for them to have such high quality food safety testing. This action left Creekstone and its lawyers scratching their heads trying to figure out where in the law books it states that it's illegal to test food for safety beyond what is required by law. Creekstone took the USDA to court and last week a federal judge ruled against the USDA.

The results of the case will likely create a domino effect in the industry where more producers will voluntarily choose to increase testing in order to lure international and domestic customers.

arrow  Fast Food Industry Applauding Itself Again

Mcdkid Responding to public pressure, junk food companies have formed a task force that they claim will address the childhood obesity epidemic.

The group, which includes companies like Coca-Cola, McDonalds, and Kraft Foods, held its first meeting at the end of March. One of the first items on the agenda was how to greenwash the routine industry practice of advertising junk foods to young children. Advertisers spend more than $10 billion annually on manipulating the minds of children.

According to the Kaiser Family Foundation, children under the age of six cannot distinguish between program content and advertising. Despite this rather undisputed fact, one of the panel's experts, the chief government affairs officer of the Grocery Manufacturers Association, applauded the junk food industry's track record and offered kudos to the current practice of self-regulation saying, "For more than three decades, the self-regulatory guidelines of the Children's Advertising Review Unit have helped to ensure that advertising to children by food companies is age and nutritionally appropriate, and reflects a balanced approach to health and nutrition."

According to task force members, it is hoped that future meetings can be as productive, although the meeting concluded with no real changes to the status quo practices of advertising junk foods to children.

The Five Tastes

Sweet / Pungent (Onion)
Sour
Salty
Spicy
Bitter

 

To make a raw dish that is delicious and satisfying it is necessary to have all five of these flavors in your recipe.  The ratios will change with the type of dish you are creating.  The key to creating great Raw Recipes is learning to balance the five flavors.  With time and practice creating Raw Gourmet food will be second nature to you.

Excess sour is balanced by sweet. 
Overly bitter is balanced sour.
Fats tone down spices, and mellow too much sweetness. 
Salt brings out flavors. 

A breakdown of the five tastes:

Sweet:  banana, dates, mangos, apples, raw honey, stevia, etc.

Sour:  lemon juice, limejuice, raw apple cider vinegar, grapefruit juice.

Salty:  Celtic sea salt, Nama shoyu, kelp, dulse, miso, celery.

Spicy:  hot pepper, garlic, cayenne pepper. 

Bitter:  kale, lettuce, culinary herbs.

Specific Culinary Herbs &Spices

Italian Spices:  basil, parsley, oregano, rosemary, thyme, garlic.
Mexican Spices:  cumin, coriander, cilantro, chili powder, hot peppers, garlic, lime.
Indian Spices:  cumin, coriander, cinnamon, nutmeg, Curry, tumeric, garam masala, ginger, cloves.
Thai:  cilantro, lemon grass, cumin, curry, ginger, coconut.
Chinese:  licorice, ginger, soy sauce, miso, vinegar, garlic, fennel, cinnamon, cloves, honey.

The necessity of fats:

Fats are essential in our diets and fats are also essential in your raw food creations.  Whenever you add fat to a dish it tones down each comprising flavor, binds them together, and carries the flavors throughout a recipe.

Types of fats:

Avocado - "soul food."  Avocados are one of the most amazing fruits, and are essential in a raw food based diet.  They are a great transitioning food because of their satisfying nature.  Avocados are rich in protein and fat.  They are also loaded with nutrients and minerals:  A, B complex, C, E, H, K, folic acid, magnesium, copper, iron, calcium, potassium, and many other trace elements.  Avocados provide all of the essential amino acids, with 18 amino acids in all, plus 7 fatty acids.   Avocados are an alkalinizing fruit that contain 70% water, 63% monounsaturated fat, 20% polyunsaturated fat, 17% saturated fat, and no cholesterol. 

Young Coconuts and Coconut Butter:   

Coconuts are made up of 100% saturated fat and no cholesterol.  Saturated fat from a fruit is a necessity in our diet.  The saturated fat molecules in a coconut are called Medium Chained Fatty Acids.  Unlike the saturated fat found in meat and dairy, the fat in coconut can easily be broken down in the body (coconut fat has 8-12 carbon atoms, while meat fat contains 14-24 carbon atoms).  Coconuts contain some of the most powerful anti-fungal, anti-viral, and anti-microbial acids in the environment: 

Olives and Olive Oil:

The Almighty Olive!  The olive has been a fruit of reverence for more than five thousand years.  Olive Oil is an alkaline fat source that is high in protein - similar protein to fat ratio as red meat.  Olive oil is one of the highest natural sources of vitamin E and is high in polyphenols - water soluble antioxidants.    When buying olive oil only buy first cold pressed extra virgin olive oil in dark bottles.  Olive oil is very unstable and is negatively affected by light and heat - It becomes rancid and acts like tans-fatty acids in the body.
