How Eliminating Animal Products From Your Lifestyle Benefits the Earth

* POLLUTION/GLOBAL WARMING
Animals raised for food produce 130 times more excrement than the entire human population --- 86,600 lbs per second --- which all too often leaches into streams and contaminates groundwater. Nearly 90% of all U.S. farms drain into a single body of water - the Mississippi River. Waste lagoons on livestock farms release a considerable amount of methane into the atmosphere, a greenhouse gas which contributes to global warming.

* LAND USE/DEFORESTATION/HABITAT DESTRUCTION
Nearly 90% of all agricultural land in the U.S is used to raise animals for food. 20 times more land is required to feed a meat-eater than to feed a pure vegetarian. For every quarter-pound burger made of rainforest beef, 55 square feet of land are consumed. Livestock grazing is the number one threat and cause of elimination of tropical rainforest species.

* WATER
Nearly 50% of all water consumed in the U.S. is used for livestock. The production of one pound of California beef requires a total of 2,464 gallons of water. You would save more water by not eating a pound of California beef than you would by not showering for 6 months.

* ENERGY
Raising animals for food requires more than 30% of all raw materials and fossil fuels used in the United States. Producing a single hamburger patty uses enough fossil fuels to drive a small car 20 miles, not to mention enough water for 17 showers.

* FISH FARMS/FACTORY TRAWLERS
Fish and shrimp farms destroy habitat and contaminate water with the heavy use of antibiotics, causing coastal pollution, displacement of local people from their land, and the clearing of mangrove forests. They take away land that is traditionally used for growing rice, the primary staple for most of the world's people. Just like their land-dwelling counterparts, fish and shrimp are highly inefficient converters of protein. It takes 5 lbs of wild ocean fish to feed and produce a single pound of farmed saltwater fish or shrimp.
Think you're better off eating wild-caught? Think again. Factory trawlers use long lines with thousands of hooks and huge nets, spanning up to 80 miles. These lines wreak havoc, destroying the ocean floor and drowning everything in their path, including seabirds, seals, dolphins, sea turtles, and countless other species. About 25% of all animals caught in factory nets are thrown away (by-catch). Factory trawlers have driven more than 100 species of "food fish" to full or near extinction and have caused irreparable harm to others.

* PERSONAL HEALTH/ANTIBIOTICS
The obesity rate among the general (meat-eating) U.S. population is nearly 50%. For vegetarians, that number drops to 6%, and for vegans (people who abstain from all animal products), it is only 2%. The increased risk of heart disease and gallstones for obese people is double to triple; the risk of colon cancer is triple to quadruple; and the risk of diabetes is 40 times greater than for people at a healthy weight. Vegetarians and vegans enjoy a reduced risk for obesity, coronary artery disease, hypertension, diabetes, and some types of cancer. This translates to a much lower drain on U.S. tax dollars spent on health care and preventable medical procedures.
In addition, the EPA estimates that 60 - 80% of all livestock receive antibiotics as a routine food additive, leading to an increase in antibiotic resistance in humans by causing selective pressure for the emergence of antibiotic-resistant bacteria. Roughly 24 million pounds of antibiotics (about 70% of the nation's total antibiotic use) are added to animal feed every year to speed livestock growth.

* PUBLIC HEALTH
Open waste lagoons on factory farms store urine and liquefied manure, home to more than 150 pathogens (disease-causing organisms) such as Salmonella, E. coli, Cryptosporidium, and fecal coliform. These pathogens are 10-100 times more concentrated than in human waste and pose a serious threat to human health. Animal waste is also contaminated with endocrine disrupters from pesticides (consumed via feed crops) and hormones (fed to cattle to speed up growth), which can alter sexual development in humans, undermine intelligence, and render us less resistant to disease. Animal waste lagoons emit toxic fumes (such as ammonia, hydrogen sulfide, carbon dioxide, and methane) which can cause diarrhea, nausea, headaches, eye irritation, sore throat, shortness of breath, wheezing, excessive coughing, seizures, coma, and even death. Nitrate-contaminated drinking water can increase the risk of methemoglobinemia (blue baby syndrome), and high levels of nitrate contamination have been linked to spontaneous abortions.

* WORKER SAFETY
On average, 25% of factory farm workers suffer job-related injuries and/or illnesses each year - the highest rate of any job in the country. At high concentrations, methane and/or carbon dioxide can displace enough oxygen to suffocate a worker; hydrogen sulfide can result in unconsciousness, respiratory failure, and death within minutes; and ammonia causes severe irritation to the eyes, nose, throat, and lungs, and can also be fatal.

* SUSTAINABILITY/WORLD HUNGER
Livestock are simply not efficient converters of protein - it takes 17 pounds of grain to produce 1 pound of beef. As the meat industry devotes more and more grain to feeding livestock, valuable food resources are diverted from the hungry, contributing to food scarcity for the world's poor, particularly in developing countries. An astounding 70% of U.S. grain and soybeans are fed to livestock. If Americans were to reduce their beef consumption by only 5%, it would free up the 12 million tons of grain needed to adequately feed every single person on the planet who dies from hunger or hunger-related diseases annually.

arrow  Teacher Kept Twinkie for About 30 Years

(BLUE HILL, Maine - Yahoo News) A Twinkie standing the test of time on the edge of a blackboard may be a retiring science teacher's lasting legacy.

Roger Bennatti developed a reputation as an innovative teacher during his 31-year career at George Stevens Academy, using new methods to introduce students to subjects he loved. But the legend of the Twinkie looms over all.

Speckled with bits of mold, the bright yellow cake still adorns his lab, but Bennatti only vaguely remembers why he kept the Twinkie so long.

"We wanted to see what the shelf life of a Twinkie was," said Bennatti. "The idea was to see how long it would take to go bad."

The Twinkie stayed on top of the board through his career - joined in later years by a Fig Newton - and occasionally inspired new food experiments. Bennatti estimates the ever-yellow Twinkie is about 30 years old.

"It's rather brittle, but if you dusted it off, it's probably still edible [sic]," Bennatti said. "It never spoiled."

The fascination with the Twinkie lasted until Bennatti's retirement in June, said Libby Rosemeier, a former Bennatti student and teacher at the school.

"We had to spirit it away at the end of the year," said Rosemeier, who has volunteered to become the Twinkie's new caretaker. "The kids all wanted it."

Rosemeier said her father, a carpenter, plans to make a case for the snack, and she hopes to hang it in her new classroom next year.

Dear CHI and my CHI friends,

My country has a very rich culture, background and abundant natural resources and agricultural produce. We have a beautiful tropical setting. Yet the influences and conquests of different nationalities, personalities, beliefs and traditions, and politics created a big demarcation of rich and poor. Poverty has been an leading concern.

Being part of the not-well-off citizenry, I experienced the bitter plight and desperation of not having money to afford better medical attention and care, that made me lose my 7th month old baby and a series of miscarriages. It was one of the most devastating episodes of my life that prodded me to find a way to be healthier.

When I found on the Internet about raw food nutrition, studied it on line and experimented on my own recipes, my body resonated with the living food experience. I shared the experience with family and friends with my food preparations. It was doing something naturally good for all of us. However, my Internet knowledge did not give me a structure of the lifestyle. So I embarked to learn this better.

Due to my financial constraints but with the driving inspiration and motivation that this lifestyle can alleviate and address naturally and economically the health issues me and my fellowmen are faced with, I presented a study, documentations of testimonies and scientific articles, made raw food samplings and demo to support this claim to be afforded a study grant. I approached my family, gov't agencies, individuals, schools, companies and other personalities for assistance. Securing a sponsor was most humbling at the same time challenging because no one could support this advocacy. No institution can take me because I do floral and cakes only by orders. Being rejected for more than fifty times got me discouraged but did not crush my spirit or hinder my raw food living.

For more than a year of perusing possible means of support, my husband believed in my cause because he experienced the benefits. He took a loan on my behalf from his salary. But this meant that it will take almost all of his take home pay for three years. The loan can only cover exactly my airfare and my CHI fee. I convinced him that I will compensate by doing raw food preparations when I get back home.

The graciousness, kindness and warmth I encountered with all of you, the new found friends and CHI experience with a 100% raw food diet made this trip truly the first best and most expensive commodity have ever afforded myself. There is something spiritual and magical in your institution as far as I experienced it. I believed the 100% raw food meals elevated my awareness, deepened my appreciation and value to this physical vessel God gave us.

My CHI certificate backed me up to be privileged to work on a raw food restaurant in Chicago without compensation but in exchange for a certificate as a raw food chef. The almost 14 hours of everyday work for 3 weeks honed my skills in food preparation. I felt more technically equipped with raw food training.

What I learned , experienced and encountered in my trip over there in the US gave me a more established definition of my life purpose and well being.

Coming back home to share this lifestyle was financially challenging. For 3 months I was struggling to support my raw food samplings and demo to introduce this lifestyle. I was encouraged by the thought that I am in a planting season. I am establishing more networks, contacts and opportunities to support not only this advocacy but also reap financial rewards for better expression and holistic enhancement of my family and fellowmen. It is a slow process but the acceptance and awareness is progressing. But with the burden of a loan and bills piling up, and all the daily requirements and expenses, my family sacrificed on a 2 meals a day. Yet, they did not feel impoverished because the raw food meals gave them full nourishment for the day.

I feel bad for the sacrifice and condition I put my family up to this moment. Yet when I see and hear people tell me of their improvements on their health concerns, I share that our sacrifice as a family has done a good service. I know the financial struggle is only temporary. I have been sharing raw food to charity hospitals, to indigent cancer support groups and still moving around and about to spread raw food especially those who have had lost hope and surrendered to their conditions. I am only able to press forward and further because I am inspired by the memory of the generosities and support I had from my CHI friends and staff. You are all instruments and inspirations for the wonderful change and transformations that is happening to all that is being healed with raw food here in my country. I know I am just beginning and will have a long way to go. But it is a wonderful privilege to be able to serve well and make a difference in my own special way.

Thank you ALL for the most wonderful experience. Thank you to all my CHI friends and staff for the generosities I received, to the books, materials, massages, laughter, hugs and all other stuff, most especially the gift of your presence in my raw food journey. (from Creative Health Institute)

Ingredients:
Big Bunch of Bananas
2 Oranges
1/2 tsp. Vanilla (Raw)
2 Tbls. Physillium

Peel bananas and cut up enough to fill large pie shell.
Put remaining bananas in blender with oranges, vanilla, and physillium.
Blend to pudding consistency.
Mix with cut bananas and pour into pie shell.
Serve and enjoy!!!

It's also great with ground flax sprinkled on top!

Rice2 We have been talking with a couple in Australia who's 12 month old baby was taken from them last week for being “skinny” and being fed a raw vegan diet.

They emailed me a photo and the baby looks a picture of health! Why aren't all the obese babies being taken away from their parents when it is KNOWN that these babies are at risk for disease, whereas one can totally thrive being skinny! The authorities are saying this baby is low in protein levels. But he hasn't been sick a day in his life! Not even so much as a runny nose! So because he doesn't measure up on paper to some government standard of how much protein a person is supposed to have he is being separated from his parents. I suppose they want to get his protein levels up to a level where he will be ever-congested and riddled with everything from diaper rash to colic to asthma to chronic debilitating diseases! What a time we live in!

After helping several families over the years with similar issues Storm and I have decided to form a League For The Protection of Raw Vegan Families under the umbrella of our non-profit organization Ekaya, Inc..

We want to make this League open to everyone who is moved to be involved in any way. If you want to help through just putting your name on our list of supporters or members, if you are a professional person who can contribute legal help, medical or scientific support, or simply to lend credibility, if you have had personal experience with this type of thing and are able to offer emotional support and advice to the families involved, or if you would like to volunteer in any other capacity we would love to hear from you. Just email me at info@thegardendiet.com with whatever information you would like us to know about you and we will keep you in our database of supporters. We'll contact you if there are opportunities to help, we'll keep you updated on our activities from time to time, and we'll list you as League Members in our petitions on behalf of the families.

We are putting together an Educational Package that families can give to the authorities they are working with to educate them on the scientific and medical validity of the raw vegan diet. If anyone has any information to contribute, especially articles from medical journals, studies done by universities, recommendations from doctors, or reports from the FDA, CDC, or other government or medical institutions we would be grateful for this information to include in the package.

The Educational Package will include our film “Breakthrough” in which a Medical Doctor tells us that there is nothing unhealthy about being thin. At the time Adagio was quite underweight according to the charts. The doctor said there was nothing to worry about since he wasn't sickly. He also looked a picture of radiant health and was full of energy with no physical complaints whatsoever.

The Educational Package will also include the DVD “Eating” which was produced by doctors and gives the most factual and compelling scientific evidence for a plant-based diet that I have ever seen.

To Our Trustees

In September 2006 I became the Director of the Creative Health Institute after spending several weeks as an energy exchange worker that began the last week of April 2006. Since my responsibility as director is to manage the daily operation of Creative Health Institute by fulfilling our mission, we have been diligently working to increase the program quality and facilities. All employees and energy exchange workers are engaged in providing our guests with an enhanced experience in which they are able to digest and assimilate the living foods lifestyle, as developed and taught by Dr. Ann Wigmore, with ease.

Since we have been focusing on increasing program and facility quality, we have accomplished many tasks and continue to make improvements. With the addition of Glen to our work exchange program our facilities improvement has made tremendous strides. Glen is a handyman, and his skills have been a tremendous asset to the facility. Last Saturday Jim Haughey and Glen finished installing the new laminate counter top in our serving line. The Sunday buffet was enjoyed with the use of this improvement. Other projects have included the replacement of a leaky water heater in the guest bathrooms, the installation of an insulated entrance door and the installation of shelving in the guest bathrooms on the ground floor. Our staff team member, John, has spent several days painting the guest entrance hallway and other entrance areas in addition to his regular duties as second shift team lead. Ron, energy exchange, started fertilizing our wheat grass, buckwheat and sunflower greens with Ocean Grown. This addition has decreased growing time and increased the sugar content-mineral level according to the Brix test. The research on this product shows that wheatgrass grown with Ocean Grown fertilizer contains more minerals, then wheatgrass without it. The green thumb of our growing room; furthermore, has tested the soil for PH balance and nutrient composition. Our kitchen staff, Jeannie and Janet, have successfully added three new food preparation classes; soup and salad dressing, pasta and dessert. Eighty percent of the feed back from guests regarding program improvement was more hands on food preparation. We listened and took action. Mary Lou, office/bookstore manager, has completed the movement and set up of the new bookstore and added a few books and other items that will facilitate and provide our guests with the opportunity to reinforce and live the program at home.

Even though we have made tremendous strides, we persist in improving. As we continue this journey, we will be improving the quality of our videos used for class instruction. Moreover, we will continue to focus on facilities improvement. The goal of current projects is to save heating expense by insulating and improvement of the instruction area in the kitchen.
