arrow  What are the Benefits of Eating Raw?

Do you want to achieve optimal health? The best way to do that  is to eat a high enzyme diet consisting of raw fruits and vegetables, sprouted seeds, nuts, grains and some seaweed.

Eating predominantly cooked food puts a tremendous strain on your body. To understand why this is true, you need to  understand the role enzymes play. Enzymes are in the cells of  every living plant and animal. It is enzyme activity that  accomplishes all biological work from blinking an eye, to  lifting a finger, to having a thought.

When you eat, you need enzymes to help digest the food. If the food you eat is raw-whether it is a rutabaga, a carrot, a lettuce leaf or a banana-all the enzymes you need are right there in the food itself, ready to go to work for you.

If the food is cooked beyond 104 F, however, these naturally occurring enzymes are killed by heat, and your body must manufacture its own digestive enzymes to do the job.

Is this a problem? Raw fooders believe it is. The father of the food enzyme concept, Dr. Edward Howell, explained that when your body is busy digesting food, it is unable to divert the necessary energy to make the type of enzymes needed to do other tasks. There is a tug-of-war between the demands of your digestive system for a constant supply of digestive enzymes and the needs of your body for the metabolic enzymes vital for cleansing, healing, and building. Without an adequate supply
of metabolic enzymes, over time, you suffer.

What does this suffering look like?:

This decline in health is usually attributed solely to 'aging'. But it is really the result of two facts: Over time, your body loses its ability to manufacture enzymes (young adults have thirty times the enzymes of the elderly); and, when you eat food that is cooked, it forces your body to manufacture enzymes for digestion, instead of enzymes that could be used for healing. Ultimately, when you don't have enough enzymes to carry the basic needs of life, you die.

Hi Jim.

That was the most wonderful time. That was exactly what I discovered on hundreds of books, and CDs I work through the last 4 years. Namely, detox, positive lifestyle and nutrition. I wanted to be sure I do everything right, that's why I went there. I enjoyed the kitchen so much. All the people involved are sincere; money is not important to them.

I will promote this Institute to everyone.  It's far from home. It took me 30 hours traveling. Strangely, I had no jet stress or jetlag. Coming back same thing. I didn't sleep on the planes, and after two days and 2 night awake, coming home, I slept 3 hours, got up and answered my emails, slept another hour got up and work all-day today, no problem.

I am 64 years, so this is really something. I attribute it all to the raw diet I have been following 100% the last two and a half months.

Today I have been asked to give a full day demonstration and lectures to some friends who have tried the raw diet, with an immediate improvement in their health. I am now preparing for it. It will be a busy one, having different sizes of sprouts, greens, and everything on one day, but I know the story now, looking forward to it.

Eating Healthy on the Road

Eating healthily on the road can often be difficult. Discovery Health recently unveiled their list of the top 10 rules to eat well and maintain your health while traveling, including:

  • Pack your own food. If you spend a lot of time in your car, consider buying a small cooler.
  • Plan Ahead. Before getting on a plane or a train, eat a healthy breakfast.
  • Get the healthier menu items at fast food restaurants, such as grilled fish, chicken salad or a grilled chicken sandwich for lunch or dinner.
  • Avoid late-night eating. Consuming calories late at night is an easy way to gain weight.
  • Watch your alcohol intake. Keep to one glass of wine with meals, and avoid hard liquor.
  • Maintain your exercise regimen.

The most common sleep disorder is insufficient sleep - (Dr. Mercola) In April of this year, the Institute of Medicine issued a report that confirmed definite links between sleep deprivation and increased risks of hypertension, diabetes, obesity, depression, heart attack and stroke. Some scientists are also investigating connections between insufficient sleep and depressed immune function. Sleep can work to activate or inhibit hormone production in the hypothalamus, which is the part of the brain that gives the body signals regarding when to adjust temperature, blood pressure, digestive secretions and immune activity. Insufficient sleep also inhibits the pancreas from producing insulin, the hormone required for the digestion of glucose. A groundbreaking 1999 study showed that after six days on only four hours of sleep, healthy volunteers would fall into a pre-diabetic state. Sleep also gives the heart a chance to slow down, and those who less than six hours a night have as much as a 66 percent greater prevalence of hypertension. The largest study of sleep duration and mortality followed over one million participants for six years. Those who slept about seven hours had the highest survival rate, and those who slept less than 4.5 hours had the worst. Nine hours of sleep or more each night was also associated with a higher mortality risk, however. In general, a good night's sleep seems to be as important to good health as a nutritious diet and regular exercise. Beware of most Vitamin D prescription supplements - Supplemental vitamin D comes in two forms: ergocalciferol (vitamin D2) and cholecalciferol (vitamin D3). They have generally been regarded as equivalent and interchangeable, but that notion is based on studies of rickets prevention in infants conducted seven decades ago. Recent studies have shown that vitamin D3 is a more potent form of vitamin D. Vitamin D2 has a shorter shelf life, and its metabolites bind with protein poorly, making it less effective. One unit of cod liver oil (containing vitamin D3) has been shown to be as effective as four units of Viosterol (a medicinal preparation of vitamin D2). arrow  Raw Living Food Recipes - Raw Carrot Cake / Pumpkin Seed Tip

Carrot Cake

(Makes 12 to 16 servings)

1 pound of carrots
2 cups pineapple
2 apples
2 1/2 cup soaked walnuts
2 cup soaked almond
2 1/2 cup pecans
2 cup pumpkin seeds
1/2 tsp cinnamon
1 cup dates
1 cup raisins
1/3 teaspoon pumpkin spice
3 tablespoons psyllium powder

Frosting:
1-2 cup soaked and blanched Almonds
1 cup dates
1/2 teaspoon cinnamon
1 pinch clove
1 Thai coconut (this is a young coconut, also called a Jelly coconut. It has a soft inside and can be found in Asian markets.)

For decoration:
½ cup miniature carrots or coarsely shredded normal sized carrots
12 to 16 mint leaves

Step 1: Put 1 cup raisins and 1 cup dates in the food processor, mix to a paste

Add soaked almonds and mix. Then add 2 cup walnuts, 1 cup pecans and pumpkin seeds with remaining spices and mix to a paste. Put all in a bowl. Add 1/2 cup raisins but 1/2 cup pecans and 1/2 cup walnuts in food processor and shred to little chunks only (not too fine). Add to dough in the bowl.

Cut carrots into chunks and shred in food processor until fine. Add pineapple and apple chunks and mix with psyllium powder. Add mixture to the dough in the bowl. Now mix all together by hand and pour into a spring form.

Step 2: For Frosting:

Put the remaining dates, blanched almonds and coconut meat from the Thai coconut into a blender, add coconut juice and mix to a cream. Spread the cream over the carrot cake and decorate with little carrot halves and mint leaves.

Alternative: If you can't get a Thai coconut, use more blanched Almonds and water instead. It works as well. The cake will be ready to serve after at least 2 hours in the refrigerator and keeps fresh for up to 5 days if stored in the fridge.

Pumpkin Seed Tip

Save those pumpkin seeds! Pumpkin seeds support the function of the immune system, assist prostate health and help lower cholesterol levels. They are also a useful source of omega 3 fatty acids and zinc. Enjoy a time of family fun by turning them into a healthy whole food treat.

Remove the seeds from the pumpkin's inner cavity and wipe them off with a paper towel to remove excess pulp. Spread them out evenly on a paper bag and let them dry out overnight.

The next day, place them in a single layer on dehydrator trays and put them into the dehydrator for 8-24 hours. It's lots of fun and your family will reap the rewards of a healthy snack.

P.S. from Jan: Butternut and Acorn and other types of squash seeds are VERY tasty too! I like to put them on dehydrator trays and dry; saves all their nutrients and digestive enzymes.

This month marks the third anniversary of the Home Study Program, developed from the teachings of Dr. Ann Wigmore at Creative Health Institute. I put this program together because, as Director of Creative Health, I talked to many, many people who either didn't have the time, or the money, to attend the two-week hands-on program in Michigan. I was going over the books this morning, and realized that we've shipped 20,000 videos in the last three years! That truly amazed me.
