Last month I did an Internet Radio with Chris Brisson, which we recorded. Unfortunately, Chris' part of the interview had a heavy echo in it. We had planned to re-do the interview before posting it, but my schedule just hasn't allowed the time.

Since I'm off to Maui to explore opening a Living Foods Institute there, I've decided to post the recording as-is. Hopefully, after I get back home Chris and I can re-record the interview.

arrow  Shopper's Guide to Pesticides in Produce

There is growing consensus in the scientific community that small doses of pesticides and other chemicals can adversely affect people, especially during vulnerable periods of fetal development and childhood when exposures can have long lasting effects. Because the toxic effects of pesticides are worrisome, not well understood, or in some cases completely unstudied, shoppers are wise to minimize exposure to pesticides whenever possible.

Nearly all of the data used to create these lists already considers how people typically wash and prepare produce (for example, apples are washed before testing, bananas are peeled). While washing and rinsing fresh produce may reduce levels of some pesticides, it does not eliminate them. Peeling also reduces exposures, but valuable nutrients often go down the drain with the peel. The best option is to eat a varied diet, wash all produce, and choose organic when possible to reduce exposure to potentially harmful chemicals.

What are Phytonutrients:

Phytonutrients are the active components found in the skins of fruits, vegetables, grains, and seeds that are responsible for pigment, taste and smell. Unlike the traditional nutrients found in protein, fats, vitamins, and minerals, phytonutrients are not "essential" for life; however, they have been shown to be powerful antioxidants that work to promote overall health.

There are over 25,000 different phytonutrients that have been identified in fruits and vegetables. Those foods rich in phytonutrients include tomatoes, green tea, carrots, broccoli, wheatgrass and chlorella. To function at optimal health, the human body needs a wide variety of phytonutrients from a variety of sources. The best way to reap the benefits of phytonutrients is to eat natural, whole foods.

What is Wheatgrass:

The wheatgrass that is certified organic produces high concentrations of chlorophyll, enzymes and vitamins. The wheatgrass seed begins its journey absorbing natural nutrients from a soil prepared using organic methods containing NO genetically engineered products, in preparation to become a tall, fruitful plant. At this stage, the plant has the nutrient profile similar to that of other leafy green vegetables and will continue to grow until these nutrients reach their peak levels, at about three inches in length. Organic wheatgrass contains vitamins A, B complex, C and E, trace elements calcium, iron, magnesium and potassium, enzymes and amino acids. As an antioxidant, organic wheat grass can boost the immune system and scavenge free radicals. Organic wheatgrass has been shown to be a powerful body detoxifier. Its high chlorophyll content cleanses the liver, tissues and cells and purifies the blood. Organic wheatgrass also contains folic acid, iron, and vitamin B-12 which are required for proper red blood cell production.

What is Chlorophyll:

Chlorophyll is the green pigment molecule in plants and is responsible for absorbing the sun's energy for photosynthesis.. Interestingly, the chlorophyll molecule in plants is chemically similar to hemoglobin in human blood. The only difference in the two molecules is that the central atom in chlorophyll is magnesium, whereas in humans it is iron. As a food supplement, chlorophyll can detoxify and purify the blood and liver, help build red blood cells and aid in tissue repair.

What are the other ingredients:

Vitamin A (as Natural Beta Carotene) for improved eye health and to guard against infection;
Vitamin B-2 (Riboflavin) to aid in the release of energy from foods and promote normal growth and development;
Vitamin C to guard against cardiovascular disease, boost immunity, aid in wound healing, help form collagen in connective tissues;
Vitamin D to maintain blood levels of calcium and promote its absorption;
Vitamin K for proper bone and blood function;
Calcium for strong bones and teeth, efficient blood clotting, nerve cell transmission and health muscle contractions;
Potassium for proper electrolyte and fluid balance;
Iron for stimulation of the bone marrow production of hemoglobin (red-blood cell that carries oxygen to other cells)

What is detoxification:

After a period of time, the body builds up toxins and natural waste products from chemicals, pollution and overindulging. A process of cleansing the internal system, or detoxifying, helps rid the body of harmful chemicals that may be contributing to fatigue, illness, pain, and poor digestion. Cleansing can be achieved through various modalities, including fasting, diet, saunas, and a range of whole foods vitamins, herbs, and nutrients.

What does Wheatgrass do for me:

Organic wheat grass detoxifies and oxygenates the blood thereby increasing circulation, energy levels, immune system function and an overall sense of well being from good nourishment. I couldn't agree more with your statement about those of us with too little experience and too much enthusiasm, and I'll tell you why. In late Dec. 2004 I spent two weeks at CHI, and about a month later my wife spent two weeks there. When I came home, I had it all figured out. I had stopped eating meat, which I am proud to say I still do not eat, and I just knew that I was a strict "raw fooder" forever.

A year and a half later, after consistently taking one step forward and two steps back, I realize that I must commit myself to this way of life for the long haul. It is just not something that we figure out in two weeks or even a year. While I have kept a diary since leaving CHI, when I read back over it, I see more that I don't know than I do know.

The one positive aspect of the whole experience, though - and it is a big one - is that where my wife was scheduled to have both knees replaced in Feb., 2005, she has been able to cancel that surgery. Today, while not totally pain or symptom free, she is able to work 35 to 40 hours a week, where before she could not be on her feet for more than 2 hours at a time.

No, we did not learn everything by coming to CHI, but it all started there, and a year after the exploration that started there, we are much the better for it.

P.S. Tell Mr. Haughey that a revelation came to me the other day. That is, the reason that eating raw food is not the same as eating meat is that when we eat a living food, we do not kill the plant. Rather, it lives on as part of our living blood. It becomes part of our life force.

Teenagers who eat fruit and vegetables every day may build stronger bones than those who don't, according to new research from Cambridge University. (New Zealand) Christchurch vegan Ella Soryl (11) has challenged Professor Robert Pickard to prove his claims that her diet is lacking. High Meat Consumption Linked to Colon Cancer - Until recently, eating a high-fiber diet was thought to prevent colon cancer, but it has proved disappointing. Possible villains in meat: heme iron, nitrates, nitrosamines and salt in processed meats, and heterocyclic amines in meats cooked at high heat. (American Family Physician) Common warts (verruca vulgaris) are a common problem among patients who present in family physicians' offices. Although a significant number of warts will spontaneously resolve over two years, patients frequently request treatment to clear their skin of the lesions. Treatments such as cryotherapy, acid preparations, laser therapy, heat, and tape occlusion have been used in the management of warts, with cure rates ranging from 32 to 93 percent. However, most of these therapies are expensive, painful, or labor intensive. A few small, nonrandomized trials have studied the use of duct tape in wart treatment, with one study reporting cure rates of approximately 80 percent. arrow  Raw Living Food Recipe - Divine Pumpkin Pie

A Fall Harvest Treat

Devine Pumpkin Pie

Filling:
1 medium pumpkin
8 dates
3 tsp cinnamon
1 tsp nutmeg
1 tsp ginger
1/2 tsp cardamom
1/4 tsp cloves
1/4 tsp allspice
1/4 cup of raw honey
3 Tbs. coconut butter
2 tsp vanilla extract
3 Tbs. psylium husks

Crust:
2 cups pecans
8 dates
2 tsp vanilla extract
2 tsp cinnamon
1 tsp nutmeg
Dash of sea salt

Frosting: (optional)
2 cups of cashews
6 dates
2 Tbs. raw honey
The juice of one orange

1. In a food processor or champion juicer homogenize all the ingredients in the crust. Take homogenized mixture and press into the bottom of a pie plate.

2. In a Vita Mixer or blender combine all the ingredients for the filling and blend until creamy. The filling should be creamy and semi-firm. The psyllium and coconut butter will thicken the pie as it sits in the refrigerator. Add filling to the crust.

3. In a blender or Vita Mix blend cashew frosting together. Frosting needs to be loose enough to spread over the pie. A little water may be needed.

4. Allow to set in the refrigerator for at least one hour.

While I was studying at Brenda Cobb's Living Foods Institute last month I met Harold Blackmarr, who is interested in starting a Living Foods Institute.

Harold has 10 acres of land near Macon, GA, with a farmhouse on it and some buildings. The land is zoned Agricultural, and Harold thinks that a dedicated couple could grow a wonderful Organic garden and start a small Living Foods Education Center on the property.
