I'd like to say, "Thanks!" to the hundreds who emailed me about not receiving a newsletter last weekend. Yes, I'm OK. I went on vacation for two weeks. Before leaving I created the newsletter for August 19th, and thought that I'd find time to create the newsletter for the 26th while I was traveling, but....

I saw lots of old friends on my trip, covered 7 States, and had a wonderful time. The highlight was visiting my Dad, who turned 84 last month. He's doing wonderful - even his doctors are impressed. He's active, healthy and happy. The new diet my stepmom put him on four years ago is really working - he no longer takes, or needs, any medications.

His new diet? Lots of organic fruits and veggies, and very little animal protein. No, they're not raw fooders, but what they eat is close to what we advocate. It's really made a difference for my Dad - he's healthier now than he was ten years ago.

 

arrow  The Shift to Degenerative Diseases

Global energy imbalances and related obesity levels are rapidly increasing. The world is rapidly shifting from a dietary period in which the higher-income countries are dominated by patterns of degenerative diseases (whereas the lower- and middle-income countries are dominated by receding famine) to one in which the world is increasingly being dominated by degenerative diseases.

This article documents the high levels of overweight and obesity found across higher- and lower-income countries and the global shift of this burden toward the poor and toward urban and rural populations.

Dietary changes appear to be shifting universally toward a diet dominated by higher intakes of animal and partially hydrogenated fats and lower intakes of fiber. Activity patterns at work, at leisure, during travel, and in the home are equally shifting rapidly toward reduced energy expenditure. Large-scale decreases in food prices (e.g., beef prices) have increased access to supermarkets, and the urbanization of both urban and rural areas is a key underlying factor.

Limited documentation of the extent of the increased effects of the fast food and bottled soft drink industries on this nutrition shift is available, but some examples of the heterogeneity of the underlying changes are presented. Backsliding but progressing is NOT about feeling guilty about slipping. Even if you weren't 100% raw this week, how much better are you feeling than when you were on the SAD?

 

After four years of aspiring to 100% rawness, I'm running in the high nineties. What's amazing me is how my taste buds are changing, and how I've lost the taste for most of my old favorites. Unhealthy stuff that I used to love now revolts me. Interesting. So it gets easier and easier as time goes on.

I love where I am, and how I feel. I'm down 80 lbs., and still going. The following email from Jinjee taught me something:

 

"I've discovered why it was so hard for me to stay 100% raw the last few years. I was eating what I call “borderline” foods - foods that are considered raw but often aren't such as store-bought nut butters, prepared raw foods that you can now get at Whole Foods that contain coconut butter and coconut oils which I don't believe are good for you as they harden at room temperature and have an eternal shelf-life, dehydrated foods, dehydrated and prepared and raw restaurant foods containing Braggs liquid Amino acids (not good) and Nama Shoyu (not good), lecithin (bad), cacao powder (a heavy drug), and even un-soaked nuts (not ideal).

"When I ate like this too often my cooked food cravings would return in a serious way. Now that I am no longer messing with the borderline and I'm eating more simply it is so easy to stay 100% raw it is almost effortless!"

Mr. Carey,

I couldn't agree more with your statement about those of us with too little experience and too much enthusiasm, and I'll tell you why. In late Dec. 2004 I spent two weeks at CHI, and about a month later my wife spent two weeks there. When I came home, I had it all figured out. I had stopped eating meat, which I am proud to say I still do not eat, and I just knew that I was a strict "raw fooder" forever.

A year and a half later, after consistently taking one step forward and two steps back, I realize that I must commit myself to this way of life for the long haul. It is just not something that we figure out in two weeks or even a year. While I have kept a diary since leaving CHI, when I read back over it, I see more that I don't know than I do know.

The one positive aspect of the whole experience, though - and it is a big one - is that where my wife was scheduled to have both knees replaced in Feb., 2005, she has been able to cancel that surgery. Today, while not totally pain or symptom free, she is able to work 35 to 40 hours a week, where before she could not be on her feet for more than 2 hours at a time.

No, we did not learn everything by coming to CHI, but it all started there, and a year after the exploration that started there, we are much the better for it.

P.S. Tell Mr. Haughey that a revelation came to me the other day. That is, the reason that eating raw food is not the same as eating meat is that when we eat a living food, we do not kill the plant. Rather, it lives on as part of our living blood. It becomes part of our life force.

Zucchini Hummus
by Jan Jensen

In a food processor, put:
2 cloves garlic
1 zucchini, peeled
2 c. sunflower seeds
1/2 c. raw tahini, or I just use 1/2 cup raw sesame seeds
1/4 c. fresh lemon juice
1/3 c. water
1/3 c. extra virgin cold pressed olive oil
2 teaspoons sea salt

Mix till creamy. Eat and it is very good.
