The biggest challenge we face in transitioning to raw living foods is enjoying the food. I remember my first few weeks - indeed, my first year - on a raw foods diet. After a meal I wasn't hungry, but I often didn't feel "full" or "satisfied." Two or three times a week, especially when I was already in town, I'd pick up a cheese pizza, or - once or twice - a rotisserie chicken. I'd been a vegetarian for several years, but suddenly found myself going back to meat upon occasion.

What I had to learn was how to satisfy that feeling of fullness that cooked fooders are used to having. That's where the "transition diet" comes in. In the transition diet we learn to make richer, tastier foods that mimic the tastes our bodies are used to. Mock turkey, mock mashed potatoes, mock pumpkin pie, mock chowder, and so on. There's a lot of use of oil (extra virgin olive oil, of course), honey and other natural sweeteners, and Celtic sea salt. There's also a lot more fruit in the transition diet than in a well-balanced raw food diet.

While transition foods are satisfying our appetites, our taste buds are slowly and subtly changing. Now, after three years of being more and more raw, I've reached the point that even the smell of most cooked foods disinterest me. I find them totally unappetizing. My diet has also become much simpler as time goes by, and I find myself eating more and more greens and grains, and much less fruit. I also don't need or miss that full and heavy feeling.

The best way I've found to learn a transitional diet is a visit to a hands-on school like Creative Health Institute. Not only do they serve tasty raw gourmet transition foods, they teach how to prepare it with hands-on work in the kitchen, they teach about how and why the body works, the technical reasons that a raw foods diet is better for your body - and the camaraderie and atmosphere of CHI makes it easy to be raw, because the guests and staff are all supporting each other.

Another feature of schools like Creative Health is the interesting people you meet there. In my numerous visits over the last three years I've met people from all over the US, and from Canada, Russia, Malaysia, Holland, France, Australia, Korea, Trinidad, Zimbabwe, Japan, China, England, Luxembourg -- it's like going to an International Summer Camp.

The incidence of asthma has risen by over 50 percent in developed countries in the last 25 years. As many as 150 million people worldwide suffer from asthma, and roughly 180,000 die from it each year. Exposure to chlorine byproducts, both in air and in water, could be a factor in the rising number of cases of childhood asthma. I used to say, "All the news that fits, we print." Now I can publish ALL the news; I just pick out the highlights for the weekly newsletter.

In addition, I've cut/copy/pasted almost three years of the newsletter archives into the new website, appropriately categorized. Now you don't have to dig through old issues of the newsletter on chiDiet.com; everything is organized by subject. As of today there are 797 articles online.

Many have written and told me that they set their browser's homepage to each week's version of the newsletter (chiDiet.com/news/current.htm). The new website at http://rawlivingfoods.typepad.com should be even better for that, since there are new articles being posted regularly throughout the week.

While the new website doesn't have full search capabilities yet, it's possible to do searches from within your browser, within each category. That and several other tips are posted online in the FAQ (frequently asked questions) page.

Yummy recipes for Summer enjoyment

Carrot and Jicama Salad Recipe   

This crunchy and tasty salad is best made with a good vegetable shredder called a mandolin. If you don't have a mandolin but want to buy one, try your local asian food supermarket. Almost all Korean supermarkets carry an excellent one for around twenty-five dollars. 

Jicama is a white-fleshed root vegetable that is a good source of vitamin C. It adds a great crunchy component to salads.

3 small carrots, peeled and shredded
1 small to medium jicama, peeled and shredded
1 yellow or red bell pepper, seeded and sliced into thin strips
1/4 red onion, sliced into thin strips
1 cup of chopped cilantro
Favorite Dressing  to taste

Combine all ingredients in a large salad bowl, add house dressing, and toss. Enjoy this crunchy, healthy, and yummy salad.

Lemon Balsamic Rosemary Skewered Vegetables

1 medium to large zucchini, cut in half lengthwise, then into 1/2-inch
slices
1 medium to large yellow squash, cut in half lengthwise, then into
1/2-inch slices
1 pint cherry tomatoes, washed and tops removed
1 lemon, juiced
2 tablespoons balsamic vinegar, eyeball it
3 tablespoons extra-virgin olive oil, eyeball it
salt and pepper
16 stems fresh rosemary, 6 to 8-inch lengths

Preheat grill pan over high heat.

Combine zucchini, yellow squash and tomatoes in a bowl. Dress veggies
with lemon, vinegar and oil, salt and pepper.
Wet rosemary in a bowl of water for 5 minutes. Thread veggies on
rosemary from the bottom of the stems. Fill rosemary stems and place
them on the hot grill. Cook 3 or 4 minutes on each side. Transfer to a
serving plate.
Makes 4 servings.

Basil Dressing-quick/simple version 

(no exact amounts--start with less, can add more)
in blender add pinch water
fresh chopped basil
tahini or almond butter
lemon, fresh squeezed...start with little and can opt. too....
Blend all together....
That's it!!

Basil and Miso Dressing Recipe

Ingredients:
2 tablespoons chopped fresh basil
2 tablespoons chopped onion
2 tablespoons miso or den jang
3 tablespoons extra virgin olive oil
2 tablespoons water
1 tablespoon vinegar
1 tablespoon lemon juice
1 tablespoon raw or unpasteurized honey
1/2 teaspoon Dijon-style mustard 2 small cloves garlic

Directions:

Place all ingredients except olive oil in a blender. Blend ingredients for 10-15 seconds or until homogenized.

With the blender running, remove the lid and add olive oil in a thin stream. Continue blending until smooth.

Try this delicious Italian-style creamy dressing on a fresh vegetable salad or with a plate of steamed vegetables. Best used fresh. 

Sweet Basil Dressing Recipe

We love the aroma of fresh basil and use it whenever it's available. Basil is an excellent source of vitamin C and beta carotene. This versatile sweet basil dressing can be used over steamed vegetables, fish, and baked or mashed potatoes. In the summer, try brushing it on freshly steamed or raw corn on the cob.
1 cup of roughly chopped fresh basil leaves
2/3 cup of cold pressed extra virgin olive oil
3 tablespoons of water
2 teaspoons of unpasteurized or raw honey
3 1/2 tablespoons of freshly squeezed lemon juice
1 clove of garlic, pressed or finely minced
Sea salt and pepper, to taste

Blend all ingredients in a blender or food processor until creamy. Use immediately or store in an air-tight container for up to two weeks in the refrigerator.

Open Spaces: My Life with Leonard J. Mountain Chief,
Blackfeet Elder from Northwest Montana

Dr. Ann Wigmore taught that all healing is physical, mental, emotional and spiritual. In the Wigmore program we teach at Creative Health Institute and chiDiet.com we emphasize the physical aspect of healing. We mention the other aspects, but leave the teaching of those to others.

Well, most of the time we do. After reading this book I felt compelled to share some spiritually motivated comments.

In January of '99 I had just retired, sold almost all I owned, and started my personal spiritual journey. I'd been a scientist and a rationalist all my life, but had found that science couldn't answer the Really Interesting questions. So I left science and engineering to pursue my search for Truth.

In that pursuit I've read hundreds of books, listened to dozens of lectures, and surprised myself as I evolved from religionist to theologian to philosopher.

Which brings me to Jay North's book.

When I was handed this book as a 200 page typed, double-spaced manuscript, I took it home expecting to breeze through it in a couple of hours. Instead, it took me two weeks to digest. I could only read a few pages at a time before I had to stop and think about the message Jay was sharing. Very few books move me that way.

In my spiritual research I was attracted to American Indian spiritual lore, but until this book I'd found little documentation of the broad overview that this book gives, and none so clearly, simply written.

What I found in this book was an excellent summary of my last seven years of philosophical studies. I've reached an outlook on the Nature of the Universe that is virtually identical with that of Leonard J. Mountain Chief, Blackfeet Elder.

I found, much to my surprise, that after all that research and study, I've finally reached the level of Spiritual Consciousness that the Blackfeet Indians achieved centuries ago.

Before reading this book I also believed that, in one's search for Truth, one must trod the path through Plato, Aristotle, Aristophanes, Zarathustra, Krishna, Buddha, Abraham, Moses, David, Jesus, Francis of Assisi, Aquinas, Moore, Szekely, Redfield, Dyer, Hawkins, et. al., in order to reach the conclusions I've reached.

Instead, Jay gives us the summary in short, clear words, as given by his mentor, Chief Leonard. This is the summary and concise statements that I didn't think existed.
